a spicy relish for fried chicken
11 red lomboks
4 tbsp ckicken stock (see recipe)
3 tsp palmsugar (gula jawa)
1/2 tsp salt
3 tbsp oil
Deseed the lomboks and boil them with the tomato for 1 minute in water, then drain. Pound or grind the lomboks, the shallots and the tomato fine into a paste. Heat in a wok the oil and fry the past with the salt and the palmsugar for 3 minutes. add the stock and let it simmer until it has thickened and the oil is released.
