Ma Jiang Mian - 麻酱面
sesame noodles
Ingredients:
200 gr noodles
1/2 cucumber
2 red lomboks
4 sprigs of coriander
water
Ingredients sauce:
3 cloves of garlic
1 spring onion
2 tbsp Zhi Ma Jiang / sesame paste
1 tsp sesame seeds, toasted
1 tsp red pepper flakes
2 tbsp light soy sauce
1 tbsp black rice vinegar
1/4 tsp palm sugar
2 tbsp oil
2 tbsp water
Preparation:
Heat the water in a pan and cook the noodles. Drain and cool quickly. Cut the lomboks into thin strips and slice the cucumber julienne.
Finely chop the garlic and spring onion. Mix this with the sesame seeds and pepper flakes. In a pan, heat the oil and pour it over the mixture and mix well.
Mix the water with the sesame paste little by little until it becomes a smooth and thin mixture (like yoghurt). Then mix in the soy sauce, rice vinegar and palm sugar and form a homogeneous mass.
Spoon the noodles into a bowl and then add the lomboks, cucumber and coriander and spoon over both sauces and mix well. Then sprinkle the sesame seeds on top and serve.
