Gōng Bào Xiā Rén - 宫保虾仁
spicy fried shrimp
Ingredients:
325 gr shrimp/prawns
1 tsp Shaoxing rice wine
1 tsp cornstarch
1/8 tsp salt
1/8 tsp white pepper
Ingredients sauce:
1 1/2 tbsp black rice vinegar
1 tsp light soy sauce
1/2 tsp dark soy sauce
1 tsp Shaoxing rice wine
2 tsp cornstarch
2 tsp palm sugar
1 tbsp water
Ingredients
11 dried lomboks
1 tsp Sichuan peppercorns
4 cloves of garlic
2 cm jahe
4 spring onion
2 tbsp oil
4 tbsp peanuts, fried and skinned
Preparation:
Peel the shrimp/prawns and remove the head. Clean the shrimp/prawns. Halve the lomboks and (optionally) deseed them. Cut the garlic into thin slices and the jahe julienne. Cut the spring onion into thin rings/pieces.
Mix the shrimp/prawns with the rice wine, cornflour, salt and pepper and leave to marinate for at least 5 minutes. Mix the ingredients for the sauce well.
Heat 1 tbsp oil in a pan and add the shrimp/prawns and fry until they change colour. Then set it aside. Add 1 tbsp oil and fry the lomboks, Sichuan pepper, garlic and jahe and fry for 2 minutes. Then add the spring onion and fry for 30 seconds. Then add the shrimp/prawns, peanuts and sauce and mix well. When the sauce thickens, serve.
