roasted pork (pork belly) with dip

2 lemons, juice
4 tablespoons fish sauce
1 bulb garlic
2 red rawits
2 tbsp palmsugar
1 tsp salt
1/2 teaspoon pepper
1000 gr pork belly
2 tbsp oyster sauce
1 tbsp oil
ingredients dipping sauce:
250ml white vinegar
4 cloves garlic
1 shallot
3 red rawits
1/4 tsp salt
1/8 tsp pepper
Chop the garlic and the rawits fine. Mix the lemonjuice with the fish sauce, garlic, rawits, palm sugar, salt and pepper and stir until the palm sugar and salt are dissolved. Marinate the meat with it for at least 12 hours. Remove the meat from the marinade and pour 250 ml of the marinade into a saucepan and bring to the boil for 4 minutes. Mix the oyster sauce and oil into the marinade.
Roast the meat for 3 minutes on each side. Then baste the meat frequently with the sauce and roast until done and brown in about 10 minutes. Then cut the meat into pieces and serve while the sauce.
Preparation dip sauce:
Chop the garlic, shallot and rawits fine and mix it with the vinegar, pepper and salt.
