Buntut Kuah Asam Pedas
Oxtail in a spicy and lightly sour sauce

1000 g oxtail
1500 ml of water
5 jeruk purut leaves
2 serai / sereh / lemongrass
1 tomato
3 tbsp of asam jawa + 100 ml of water
2 tbsp bawang goreng

9 shallots
7 cloves of garlic
12 red lomboks
2 cm lengkuas / laos
2 cm kunyit
4 kemiri nuts
1/2 tsp pepper
1 tsp salt

Cara membuat:
Clean the oxtail and remove the fat. Pound or grind the ingredients for the bumbu to a paste and marinate the meat with it for at least 60 minutes.
Heat the water in a pan together with the jeruk purut and the serai. Then add the oxtail and the bumbu and bring to the boil. Then reduce the heat and cook until the moisture is halved.
Then add the chopped tomato and the asam water and bring it back to the boil. Sprinkle the bawang goreng over it and serve.\\\
