Ayam Kuah Hitam
fried chicken in a sweet dark sauce

500 gr chicken thighs
2 tomatoes
5 cm cinnamon
5 cloves
6 cm jahe/ginger
1/2 tsp pepper
1/2 tspn nutmeg
6 tbsp kecap manis
1/2 tsp salt
1/2 tbsp palm sugar
250ml water
3 tbsp oil

4 shallots
4 cloves of garlic
3 red lomboks
3 cm kunyit
4 kemri/candlenuts
3 keluwak/kluwek, soaked

Cara membuat:
Cut the chicken into pieces. Cut the tomatoes into cubes. Pound or grind the ingredients for the bumbu into a paste.
Heat the oil in a pan and fry the bumbu for 5 minutes. Then add the jahe, cinnamon and cloves and mix well. Then add the chicken and fry until the chicken changes color. Then add the water little by little.
Then add the kecap, salt, pepper, palm sugar, nutmeg and tomatoes and mix well. Then stew the chicken over low heat until done and until the sauce has thickened. serve.
