Bpeek kai mao daeng
drunken chicken wings
Ingredients:
700 gr chicken wings
1 tbsp fish sauce
16 cloves of garlic
1 tbsp black pepper
3 red rawits
3 serai/sereh
4 tbsp saus tomat (see recipe
4 tbsp arrack
6 sprigs of coriander/cilantro (with root)
Preparation:
Finely chop the garlic and rawits. Finely chop the serai. Finely chop the coriander. Mix the fish sauce with the garlic, the pepper, the rawits, the serai, the saus tomat, the arrack and the coriander.
Then add the chicken wings and mix well and let it marinate for at least 12 hours.
Then roast the chicken wings over a charcoal fire until brown and done. Delicious with a spicy dipping sauce.
