Pla Rad Prig
fried fish with a tamarind sauce
Ingredients:
1 garoupa
1 tbsp asem (tamarind)
3 tbsp palmsugar
1 shallot
3 cloves garlic
2 tbsp fishsauce
4 red rawits
3 tbsp water
3 sprigs coriander
125 ml oil
Preparation/method:
Clean the fish and scor the fish. Heat in a wok the oil and fry the fish slowly on one side for 10 minutes and then for 5 minutes on the other side. Put the fish on a plate and pour the sauce on top. Garnish it with coriander leaves.

Slice the shallot, the garlic and the rawits fine. Heat 1 tbsp oil in a wok and fry the shallot, the garlic and the rawits for 2 minutes. Add the asem, the fish sauce, the palmsugar and the water and let it cook slowly until the sauce has thickened.
