Beef stew with potato - 土豆炖牛肉
Ingredients:
700 g beef
2 onions
5 cm jahe
2 star anise
6 cm cinnamon
2 salam leaf
2 cloves
3 dried lomboks
2 tbsp light soy sauce
1 tbsp dark soy sauce
1 tbsp Shaoxing rice wine
600ml hot water
1/4 tsp salt
350 gr potato
125 gr carrot
2 tbsp oil
water
Garnish:
chopped coriander
Preparation:
Cut the meat into cubes. Finely chop the onion and grate the jahe. Cut the potato and the carrot into cubes.
Place the meat in a pan and fill it with water until the meat is just covered. Then bring it to a boil and skim off the foam. Then drain well and set aside.
Heat the oil in a pan and fry the onion until it turns golden brown. Add the jahe, the star anise, the cinnamon, the salam and the lomboks and fry for 3 minutes.
Then add the meat, soy sauce, rice wine, salt and hot water and bring to the boil. Then simmer on low heat and covered for 90 minutes until the meat is tender. Then add the potato and carrot and simmer for 15 minutes, uncovered, until done.
Sprinkle over the coriander and serve.
