Tumis Peda
steamed spiced fish

ingredients:
8 red ikan peda (traditional fermented fish)
15 shallots
8 salam leaves
4 cm lengkuas/laos
30 red lomboks
8 cm kunyit, roasted
4 spring onions
8 cm jahe
4 tomatoes
3 tbsp palm sugar

Finely chop the shallots, kunyit and jahe. Chop the lomboks, spring onions and tomatoes. Thinly slice the lengkuas.
Spoon the herbs and spices over the fish and steam it for 25 minutes. Serve.
