coconut pastries from Manado

250 ml of milk
125g sugar
1/2 tsp salt
1 vanilla pod or 1/4 tsp vanilla paste
200 ml of coconut water
25 g flour
50g cornflour
2 tablespoons butter
3 eggs, separated
250g fresh coconut slivers
50g raisins
50 g walnuts
1 protein
75g caster sugar
1 tablespoon cornstarch
Cara membuat:
Mix the flour and the cornstarch with the koksowater and stir until its dissolved. Heat in a pan the milk with the sugar, salt and vanilla and bring to a boil. Add the coconut water and stir until thick. Add the butter and egg yolks and stir well. Spoon in the coconut and half the walnuts and raisins and mix and form a batter.
Pour the batter into ramekins and bake until cooked in 50 minutes at 160gr. Beat the egg whites with the sugar to a cream and mix the cornstarch through. Spoon the mixture into/on top of the ramekins together with the remaining walnuts and raisins and cook for 20 minutes at 170/180 gr. until it browns.
