Kao Niew Moon Na Gung
Sweet shrimp on yellow rice
Ingrediënts yellow rice
100 gr ketan (sticky rice)
4 cm kunyit (tumeric)
200 ml coconut milk
150 gr sugar
1 tsp salt or too taste
Ingrediënts sweet shrimp
100 gr shrimps (peeled)
3 garlic cloves
1 tsp white pepper
1 tsp coriander seeds
100 gr grated coconut
150 gr cane sugar
1 tsp salt
2 tbsp oil
2 drops natural orange food coloring
Garnish:
2 kaffir lime leaves
Preparation
Pound the kunyit into a paste. Soak the rice in warm water with the kunyit for 6 hours and steam the rice for 15 minutes. Mix the rice with the coconut milk, the sugar and the salt. The rice will soak up the coconut milk.
Pound the garlic, the pepper and the coriander into a paste. Chop the shrip into a fine mince and mix it with the paste. Heat in a wok the oil and stir-fry the shrimp mix. Add the grated coconut, the food coloring, the salt and the sugar and fry it for 2 minutes.
Serve the shrimp on top of the rice and garnish it with fine sliced kaffer lime leaves.
