Liang Ban Fen Si - 凉拌粉丝
soun salad

Ingredients:
100 gr soun / glass noodles
1 carrot
1/2 cucumber
1 red lombok
2 sprigs of coriander
water

Ingredients dressing:
4 cloves of garlic
1 tsp chilli flakes
1 tsp sesame seeds, toasted
1 tbsp light soy sauce
1 tbsp black rice vinegar
1/2 tsp sesame oil
1/2 tsp palm sugar
1/8 tsp salt
1 1/2 tbsp oil

Preparation:
Soak the soun in water for 10 minutes. Then drain it and cut it into pieces. Heat enough water in a pan and cook the soun for 2 minutes and then drain and set aside.
Grate the carrot and cucumber. Finely chop the lomboks. Finely chop the garlic and mix it with the chilli flakes and sesame seeds. Heat the oil in a pan and add it to the garlic. Then mix in the soy sauce, vinegar, sesame oil, salt and palm sugar.
Mix the soun, the carrot, the cucumber, the lomboks and the coriander in a bowl and spoon the sauce over it and mix. Serve.
