Yángzhōu Chǎo Fàn - 扬州炒饭
fried rice from Yangzhou
Ingredients:
500 gr cooked rice
3 cloves of garlic
1 carrot
100 gr peas
7 shiitake mushrooms
75 ml chicken broth
1/2 tsp salt
75 gr shrimp
125 gr dried ham
2 eggs
1/2 tsp pepper
1 spring onion
3 tbsp oil
Preparation:
Cut the carrot into cubes. Finely chop the mushrooms. Finely chop the garlic. Cut the ham into cubes. Peel the shrimp. Beat the eggs. Finely chop the spring onion.
Heat 1 tbsp oil in a pan and fry the garlic until golden brown. Then add the carrot, peas and mushrooms and fry for 30 seconds. Then add the stock and half of the salt and cook until most of the liquid has evaporated.
Then add the ham and shrimp and fry until the shrimp have changed color and set aside.
Then add the remaining oil and fry the eggs while stirring. Then add the rice and fry, while stirring, until hot. Then add the mixture, salt, pepper and spring onion and cook, while stirring, for 20-30 seconds and serve.
