MaPo Tofu
fried spicy tofu
Ingredients:
2 tbsp kecap manis (dark sweet soy sauce)
2 tbsp tapioca starch
125 gr minced beef
450 gr tahu/tofu
1 leek
1/4 tsp salt
1 tbsp fermented black beans
1 tbsp chili beans paste
3 tbsp chicken stock
1 tbsp cornstarch
2 tbsp water
2 tbsp kecap asin (light soy sauce)
szechuan pepper to taste

preperation/method:
Mix the kecap manis with the tapioca and the minced meat and let it marinate for 30 minutes. Cut the tahu into cubes and blach it for 3 minutes in boiling water and then drain. Cut the leek into small rings. Mix the cornstarch with the tbsp's water and the kecap asin into a paste.
Heat in a wok the oil and fry the minced meat woth the salt loose. Add the black beans, the chile paste, the stock, the tahu and the leek and let it simmer slowly f
