Duo Jiao -剁椒
pickled chili garlic sauce
Ingredients:
450 gr red chili peppers (mixed)
3 bulbs of garlic
4 cm jahe
1 1/2 tbsp salt
1/2 tbsp palm sugar
1 tbsp white rice wine, otherwise 1 lime, juice
1 tbsp Bai Jiu, otherwise vodka
Preparation:
Pound or grind the peppers, garlic and jahe into a paste. Then mix in the rest of the ingredients. Then cover the mixture and leave it out of the fridge for 48 hours. Then transfer to a glass jar and store in the refrigerator. Use after 1 week.
