Chun Juan - 春卷
Chinese lumpias

15 lumpia wrappers

Filling ingredients:
200 gr minced pork
125 gr shrimp
120 gr carrot
125 gr bean sprouts
100 gr Chinese chives / garlic chives
6 shiitake mushrooms
2 spring onions
100 gr suun (dried mung bean vermicelli), soaked
2 eggs
2 tbsp oyster sauce
1 tsp sesame oil
1/2 tspn salt
1/2 tsp palm sugar
1/2 tsp pepper

Thaw the lumpia wrappers. Peel the prawns and chop finely. Slice or grate the carrot julienne. Cut the chives into pieces. Cut the shiitake into very thin slices/pieces. Finely chop the spring onion. Cut the suun into pieces.
Mix the minced meat with the shrimps, carrot, bean sprouts, chives, mushrooms, spring onion, suun and 1 egg. Mix the oyster sauce with the sesame oil, the salt, the palm sugar and the pepper. Then mix with the meat mixture.
Place 3 tbsp of the mixture in a rectangle on 1 wrapper and fold and roll it like a parcel and seal the flap with the egg yolk.
Heat enough oil in a pan and fry the lumpia until golden brown. Remove it from the pan and let it drain. Serve it with a dipping sauce.

Dipping sauce:
2 tbsp white rice vinegar
1 tsp light soy sauce
1/2 tsp palm sugar
1 clove of garlic
1 red lombok

Chop the garlic and the lombok finely and mix in the rest of the ingredients.
