Spinach salad with ginger dressing - 姜汁菠菜
Ingredients:
300 gr savoy spinach, otherwise wild spinach
75 gr soybeans / endamame beans
water
3 cm jahe/ginger
1 tsp light soy sauce
2 tsp black rice vinegar
1 tsp sesame oil
1/4 tsp honey
Garnish:
1 tsp sesame seed, toasted
1/2 round lombok, finely chopped
Preparation:
Heat in a pan the water and blanch the spinach for 1 minute and then rinse. Then squeeze out the moisture and cut it into pieces. Blanch the edamame for 2 minutes and then rinse.
Chop or grate the jahe and mix it with the soy sauce, rice vinegar, sesame oil and honey. Mix the spinach with the edamame and the dressing. Then sprinkle the sesame seeds and the lombok over it and serve.
