Ayam Bakar Hitam Manis
fried caramelized chicken

Bahan Bahan:
1 chicken
1 tsp lime, juice
1/2 tsp salt
2 salam leaf
2 cm jahe / ginger
1 serai / sereh / lemongrass
3 tbsp kecap manis
1 tsp palm sugar
1/2 tsp pepper
300 ml of water
2 tbsp oil

9 shallots
7 cloves of garlic
1/2 tbsp ketumbar, roasted
2 kemiri/candlenuts, roasted

4 tbsp kecap manis
1 red lombok, pureed
1 tbsp oil

Cara membuat:
Cut the chicken into 6 pieces and rub it in with the salt and the lime juice and let it rest for 15 minutes. Pound or grind the ingredients for the bumbu into a paste.
Heat the oil in a pan and fry the bumbu together with the salam, the jahe and the serai for 6 minutes. Then add the chicken and mix well.
Add the water, the kecap, the pepper and the palm sugar and cook the chicken until almost done. Remove the chicken from the pan.
Mix the ingredients for the marinade. Then roast the chicken over a charcoal brown fire until brown and baste it regularly with the marinade. Serve.
