Lontong Kari
curry with chicken and lontong
Bahan-bahan:
ingredients:
1 chicken
1 salam leaf
4 jeruk purut leaves
1 serai/sereh/lemongrass
1 lime, juice
1500 ml thin coconut milk (cair, from 1 coconut)
500 ml thick coconut milk (kental, from 1 coconut)
Haluskan:
bumbu:
9 shallots
5 cloves of garlic
10 kemiri nuts, roasted
3 red lomboks
4 cm jahe
4 cm lengkuas/galangal/laos
3 cm kunyit, roasted
1 tsp salt
1/2 tsp palm sugar
1 tsp pepper

Cara membuat:

Cut the chicken into 4 pieces. Pound or grind the ingredients for the bumbu into a paste.
Heat the santan cair in a pan and bring to the boil. Then add the bumbu together with the salam, the jeruk purut, the serai, the chicken and the lime juice and cook it over low heat until the chicken is done and the bumbu has been absorbed.
Then add the santan kental and bring it to the boil while stirring. Remove the chicken from the pan and fry until brown. Then pull the meat apart.
Spoon some of the complementary and the chicken into a bowl and spoon the sauce over it. Serve.
