Babirusa brem bali
Wild boar in red rice wine sauce

800 gr wild boar (or porkjoint)
1 onion
6 cloves garlic
2 cm laos(galangal)
1 leek
250 ml brem bali (red rice wine or portwine)
2 cloves
¼ tsp nutmeg
400 ml beef stock (see recipe)
1 tbsp lard

Cara membuat:
Cut the meat into small pieces, the onion coarse and the leek in diagonally 2 cm long pieces. Crush the garlic and the laos. Heat in a wok the lard and fry the garlic for 1 minute. Add the onion and fry it for 2 minutes. Then add the meat and fry it brown. Add the laosand the cloves followed by the stock and the brem bali and let it simmer slowly for 2,5 hours. Add the nutmeg, the salt, the pepper and the leek and let it simmer for 3 minutes more.
