Sambal Goring Ati Pacul
spicy liver in sauce
Bahan-bahan:
ingredients:
500 gr liver
2 shallots
4 cloves garlic
1 lemongrass, crushed
3 cm laos
3 candlenuts
2 red lomboks (large chilies)
1/2 tsp palmsugar
250 ml coconut milk
1 tbsp asem / tamarind
1/2 tsp trassi (shrimp paste)
salt to taste
2 tbsp oil

Cut the liver in cubes. Cut the garlic thin and the shallots into thin slices. Pound the laos and the candlenuts into a paste. Slice the lomboks into thin strips.
Heat in a wok the oil and fry tje shallots, the garlic, the trassi, the paste, the lemongrass and the lomboks for 3 minutes. Then add the liver and fry it brown. Add the coconutmilk, the salt and the asem and simmer it slowly until done.
