Becek Tulungagung Daging Sapi
in spiced coconut milk stewed beef

300 gr beef (shank)
100 gr red kidney beans
100 ml thick coconut milk (kental)
400 ml of thin coconut milk (encer)
2 salam leaf
2 cm lengkuas / galangal / laos
3 cloves
4 jeruk purut leaves
1 serai / sereh / lemongrass
1/2 tsp salt
1/2 tsp sugar
1 spring onion

5 shallots
4 cloves of garlic
2 kemiri nuts, roasted
1/2 teaset of ketumbar
2 cm kunyit, roasted
2 cm of kencur
2 cm jahe
2 cm temu kunci

Cara membuat:
Cut the meat into 3x3 cm cubes. Cut the spring onion into 2cm pieces. Pound or grind the ingredients for the bumbu into a paste.
Heat the oil in a pan and fry the bumbu together with the salam, the laos, the clove, the jeruk purut and the serai for 5 minutes. Then add the meat and cook while stirring until it changes colour. Then mix in the beans.
Then add the thin coconut milk and cook it until done. Then add the thick coconut milk, the salt and the palmsugar and bring to the boil. Then mix in the spring onion and serve.
