Beef with bamboo in a spicy sauce

250 gr beef
250 gr beef hart
250 gr beef liver
200 gr bamboo shoots
2 tomatoes
1000 ml water
3 kecombrang
2 sereh (lemongrass)
1 tsp palmsugar
1 tsp salt
3 tbsp oil

5 red lomboks
7 red shallots
4 cloves garlic
½ tsp ketembar (coriander)
2 cm kencur (bitterroot)
3 cm kunyit (turmeric)
2 cm jahe (ginger)
4 kemiri (candlenuts)
½ tsp trasi (shrimp paste)

Cara membuat:
Cook the liver and the hart in the water and cut all the meats into pieces. Slice the kecombrang and the tomatoes into pieces, the bamboo shoots into strips and crush the sereh. Pound or grind the ingredients for the bumbu fine into a paste. Heat in a wok the oil and fry the bumbu for 3 minutes, Add the meats, the sereh and the kecombrang and fry it for 3 minutes. The add the stock and let it simmer slowly for 1 hour. Then add the bamboo, the tomatoes, the salt and the palmsugar and let it simmer slowy until it is done.
