Udang Sambal Serai
spicy stewed shrimp/prawns with serai

800 gr medium size shrimp/prawns
1 tsp salt
20 young serai/sereh/lemon grass, white part
8 jeruk purut leaves
3 cm lengkuas/laos/galangal
100 ml coconut milk (from 1/2 coconut)
1 tsp palm sugar
1 tbsp asam water
3 tbsp oil

11 red lomboks, pitted
7 shallots
4 cloves of garlic
2 cm kunyit
1 tsp salt

Cara membuat:
Clean and peel the shrimp/prawns. Score the backs of the shrimp/prawns but do not cut them through. Mix the prawns with the salt and set aside. Pound or grind the ingredients for the bumbu into a paste. Finely chop the serai.
Heat the oil in a pan and fry the bumbu together with the serai and the jeruk purut for 6 minutes. Then add the coconut milk, palm sugar and asam water and bring it to the boil while stirring.
Then add the shrimp/prawns and cook the shrimp/prawns until done and the sauce has boiled again. serve.
