Soto Santan Tasikmalaya
Javanese meat soup with coconut milk
Bahan-bahan:
ingredients:
2000 ml water
750 g beef offal (tripe/lungs) + water
2 tsp salt
5 salam leaves
5 cm lengkuas/laos/galangal
20 cm sugar cane
3 cm jahe
750 ml coconut milk (from 1 coconut)
1 lobak/radish/daikon
2 tbsp kecap manis
1 tbsp vinegar
Pelengkap:
complementary:
2 spring onions, finely chopped
2 celery, finely chopped
3 tbsp bawang goreng
3 tbsp fried soy beans
sambal rawit
Cara membuat:
preparation:
Peel the sugar cane and cut it into 2 cm pieces. Peel the radish and cut it into 1/2 cm thick slices. Heat water in a pan together with the offal until it softens. Then drain it.
Then add the water and bring to the boil. Then add the salt, salam, lengkuas, sugar cane and jahe and cook until the meat is done and the stock has reduced by half.
Scoop out the meat and cut it into 2 cm pieces and add it back to the stock. Then add the coconut milk, the radish and the kecap and bring to the boil while stirring. When the radish is cooked, add the vinegar and bring to the boil.
Serve the soup with the complementary.
