Gai Pad Med Mamuang Himmapan
chicken with cashew nuts

Ingredients:
400 g chicken thighs
2 tsp soy sauce
9 dried lomboks
5 cloves of garlic
1/2 onion
1 green bell pepper
1 red/yellow bell pepper
150 gr cashew nuts
2 spring onion
2 tbsp oil

Ingredients sauce:
1 tbsp oyster sauce
1 tbsp soy sauce
1 tsp golden mountain sauce, otherwise fish sauce
1 tsp fish sauce
1 1/2 tsp palm sugar
1 1/2 tbsp chili paste
1 tsp sesame oil

Preparation:
Preheat an oven to 175 degrees and roast the cashew nuts for 11 minutes and set aside. Cut the meat into pieces. Cut the garlic and onion into thin slices. cut the bell pepper into strips. Halve the spring onion and cut into 1 1/2 cm pieces.
Mix the meat with the soy sauce and let it marinate for 15 minutes. Heat the oil in a pan and fry the lomboks for 1 minute and set aside. Then add the chicken and fry it on high heat on one side for 2 minutes. Then fry it until done and set aside.
Then add the garlic and fry until golden brown. Then add the onion and cook for 1 minute. Then over high heat add the chicken, bell peppers and sauce and stir-fry for 1 minute.
Mix in the spring onion, cashew nuts and lomboks and serve.
