Caldereta
beef stew
Ingredients:
1000 gr beef
500 gr pork liver
2 chorizo saugages
4 tbsp olive oil
1500 ml water
4 shallots
11 cloves garlic
340 ml canned tomatoes
5 tbsp vinegar
250 gr grated cheese
2 tbsp palmsugar
1/2 tsp salt
1 tsp pepper
2 potatoes
2carrots
1 red lombok
200 gr peas
100 gr olives
Preperation/method:
Cut the meat in pieces, the shallots and the garlic in thin slices, the potatoes in cubes, the carrots in slices, the saugages in slices, the lombok in thin strips and the olives in slices. Heat in a pan half the oil and fry the meat brown and remove the meat. Heat a large pan and add the meat, the shallots and the water and let it simmer slowly. Roast/grill the liver for 10 minutes and chopp it fine.
Heat the remaining oil in a skillet and fry the chorizo for 4 minutes and remove them. Add the garlic and fry it for 1 minute. Add the liver, the tomatoes, the vineager, the cheese, the salt, the palmsugar and the pepper and let it simmer for 5 minutes. Add the mixture in the pan with the meat and let it simmer for 30 minutes.
Add the potatoes and the carrots and let it simmer until is is done and the sauce has thickened. Mix in the chorizo, the lombok, the peas and the olives and heat it. Serve the stew with rice.
