Nam phrik kaeng khiaw waan
Green Curry Paste
Ingrediënts:
15 green chilies (lomboks)
3 shallots
10 cloves garlic
3 cm galangal (laos)
1 lemon grass
9 tsp kaffir lime rind
1 tsp coriander root
5 white peppercorns
1 tbsp coriander seeds
1 tsp cumin seeds
1 tsp sea salt
1 tsp shrimp paste (trassi bakar)
Preparation:
Roast the coriander seeds and the cumin seed without oil in een frying pan until golden brown. Add the peppercorn and pund it well. Pund the chilies and the salt together and then add the remaining ingrediënts and pund until it is mixe well. Add the cumin/coriander mixture and the shrimp paste and pound it until its a smooth and fine paste.
