Gay Tom Nam Bla
baked cooked marinated chicken
Ingredients:
1 chicken
800 ml of water
5 jeruk purut / kaffir lime leaves
2 tbsp of salt
5 tbsp of fish sauce
10 gr laos / galangal leaves
10 g of coriander / ketumbar root
5 cloves of garlic
Preparation:
Clean the chicken and put the jeruk purut leaves in the chicken. Pound or grind the garlic, the coriander root and the laos leaves into a pulp. Mix this with the salt and the fish sauce. Marinate the chicken with the sauce for at least 2 hours.
Heat in a pan the water and add the chicken and the marinade and cook until the moisture is halved. Then take out the chicken and let it drain.
Preheat an oven at 180gr C. and put the chicken in an oven dish. Bake the chicken until the skin becomes crispy.
