Qīng Jiāo Niú Ròu - 青椒牛肉
stir-fry of beef with bell pepper

Ingredients:
450 gr beef/tenderloin
1 tbsp light soy sauce
1/2 tbsp cornstarch
1/4 tsp baking soda
1/8 tsp salt
2 tbsp water
1/2 tbsp oil

Ingredients sauce:
2 tbsp oyster sauce
1 tbsp Shaoxing rice wine
1/2 tbsp light soy sauce
1/2 tbsp dark soy sauce
1 1/2 tbsp cornstarch
1/2 tsp palm sugar
1/4 tsp pepper
4 tbsp water
1/2 tsp sesame oil

Other ingredients:
2 bell peppers
1 onion
4 cloves of garlic
3 tbsp oil

Preparation:
Cut the meat into thin strips. Mix this with the soy sauce, cornflour, bicarbonate/baking soda, salt and water and knead until the liquid has been absorbed. Then mix in the oil and let it marinate for at least 15 minutes.
Mix all ingredients for the sauce well and form a homogeneous sauce. Cut the peppers into thin strips and the onion and garlic into thin slices.
Heat in a pan 2 tbsp oil and add the meat and brown it on one side. Then stir-fry the meat for 30 seconds until it is still slightly pink and set aside.
Then add the remaining oil and fry the onion and garlic. Then add the bell pepper and fry it al dente. Then add the meat and fry the meat until done. Then add the sauce over low heat and cook until the sauce thickens. Serve.
