in banana leaf fried spicy mackarel
Bahan-bahan:
ingredients:
1 ikan kembung (mackarel)
6 shallots
2 cloves garlic
1 leek
2 sprigs parsley
1 tsp trasi (shrimp paste)
3 red rawits
1/2 tsp salt
1 tomato
banana leaves
biting (small wooden sticks)
Cara membuat:
preperation/method:
Pound or grind the salt, the rawits, the garlic, the tomato and the shallots fine into a paste. Slice the leek and the parsley fine and mix it with the paste. Coat the fish with the mixture and wrap it in banana leaves. Do not cover the head and the tail. Use the biteng to secure the leaves. Grill the fish slowly above a charcoalfire for 15-20 minutes and serve.
