Yen Ta Fo
Rice noodles in red soup (1 pp)
Ingredients:
225 gr rice noodles (mihun)
400 ml hot water
4 slices fried tofu (tahu goreng)
1 tbsp morning glory
1 tsp salted soybean paste
2 tsp light soya sauce (kecap asin)
1 tsp palmsugar
2 red birds-eye chillies
1 tsp. lime juice
1/4 tsp ground peppercorn
1 tbs oil
Preparation/method:
Cut the chillies in thin strips. Soak the noodles in the water until its tender and boil it then for 4 minutes. Drain and stir the oil through the noodles.
Boil the tofu in the water and season it with the sugar, the soybean paste, the morning glory and the soy sauce.
Place the noodles in a bowl and pur the soup over it and season it with the chillies, the peppercorn and the lime juice.
