Fān Qié Chǎo Dàn - 番茄炒蛋
egg and tomato stir-fry
Ingredients:
4 eggs
4 tomatoes (300gr)
4 cloves of garlic
1/2 tsp salt
1/4 tsp palm sugar
1/2 spring onion
6 tbsp water
2 tbsp oil
Preparation:
Beat the eggs together with 2 tablespoons of water. Cut the tomatoes into thin slices. Finely chop the garlic. Finely chop the spring onion.
Heat 1 1/2 tbsp oil in a pan and then add the eggs and fry them into a scrambled egg. When it has completely solidified, set it aside.
Add the remaining oil and fry the garlic briefly. Then add the tomatoes and fry for 30 seconds. Then add the remaining water and continue frying the tomatoes until soft.
Then add the eggs, salt, palm sugar and spring onion and mix well. Serve.
