Pata Hamonado
pork in pineapple sauce
Ingredients:
1500 g pork leg/shank
1 onion
5 cloves of garlic
225 ml pineapple juice
4 tbsp apple cider vinegar
450 ml of water
125 ml soy sauce
1 tsp black peppercorns
2 bay leaf
1 tsp salt
1 tsp pepper
225 g pineapple cubes
2 tbsp palm sugar
1 tbsp oil
Preparation:
Cut the pork leg/bone into 5 cm thick slices. Cut the onion and garlic into thin slices.
Heat the oil in a pan and fry the meat until golden brown on all sides. Then add the onion and garlic and fry, while stirring, until the onion has softened.
Then add the vinegar and pineapple juice and cook for 3 minutes. Then add the soy sauce, water, peppercorns and bay leaf and bring to the boil. Then simmer over low heat and covered for 2 hours until the meat is done/tender and the sauce has thickened.
Then mix in the palm sugar, salt and pepper and stir until the sugar has dissolved. Then mix in the pineapple cubes and serve.
