Adobong Manok Sa Gata
chicken adobo in a spicy coconut milk sauce
Ingredients:
1000 gr chicken
1/2 tsp salt
7 tbsp kecap manis (dark soy sauce)
225 ml white vinager
9 cloves garlic
3 red lomboks
250 ml santen asli (thick coconut milk)
2 tbsp oil
1/2 tsp peppercorns
Preperation/method:
Cut the chicken into pieces. Slice the garlic fine and halve the lomboks. Heat in a wok the oil and fry the chicken golden brown. Add the salt, the kecap, the pepper, the garlic and the vinegar and let it cook slowly for 15 minutes. Add a little water if it becomes too dry. Add the santen and the lomboks and let it simmer slowly until the sauce has thickened and the chicken is done.
