Ayam Bakar Penyet
Grilled spicy chicken with very spicy sambal

1 chicken
1 sereh / lemongrass
2 cm laos / galangal
3 jeruk purut leaves
2 salam leaves
1 tbsp of asamwater
2 tbsp kecap manis
300 ml of water

8 shallots
6 cloves of garlic
2 red lomboks
1/2 tsp trassi
3 candlenuts
2 cm jahe / ginger
2 tsp salt

Bahan Sambal:
Ingredients sambal:
1 tea ebi
8 shallots
30 red rawits
1 tsp salt
1/2 tsp palm sugar
8 tbsp of oil

Cara Membuat:
Cut the chicken into 8 pieces. Pound or grind the ingredients for the bumbu fine into a paste and marinate the chicken with it for at least 30 minutes.
Heat in a pan the water and add the chicken with the bumbu, the sereh, the laos, the jeruk purut, the salam, the asam water and the kecap and cook it until done. Take the chicken out of the pan and roast/grill the chicken gently over a charcoal fire until brown. Then pull the chicken through the sambal and serve.

Cara membuat sambal:
Pound or grind the ebi, the shallots, the garlic, the rawits fine into a paste. Mix in the salt and the palm sugar. Heat in a pan the oil and fry the sambal for 4 minutes.
