Ayam Bakar Klaten
Roasted chicken Javanese style

1 chicken
3 salam leaves
8 jeruk purut leaves
3 sereh / lemon grass, white portion
2 tbsp kecap manis
2 tsp salt
1 tsp asam / tamarind
500 ml coconut milk
2 tbsp oil

5 kemiri/candlenuts
2 tsp ketumbar
2 cm kunyit
1/4 tsp jinten
1/2 tsp peper
8 shallots
5 cloves of garlic
1 cm kencur
1 cm jahe
1 cm laos

Cara Membuat:
Cut the chicken into 8 pieces and shred the jeruk purut. Roast first the kemiri, the ketumbar and the jinten dry in a frying pan. Pound or grind the ingredients for the bumbu into a paste.
Heat in a pan the oil and fry the bumbu with the salam, the jeruk purut and the sereh for 4 minutes. Then add the chicken and fry until the chicken changes colour (2 minutes) Then add the kecap, salt and asam and mix well.
Then add the coconut milk and cook it slowly until done. Roast the chicken over a charcoal fire until brown and bask it regularly with the sauce.
