Gado-Gado Ayam
mixed vegetables with chicken and sauce
Bahan-bahan:

250 gr bumbu pecel sayur (see recipe)
300 ml hot water
6 cabbage leaves
2 bunches of snake/long beans
2 potatoes
175 gr tempe
175 gr tofu
100 gr bean sprouts
2 tomatoes 2 small cucumbers
3 eggs, boiled and halved
oil
water + 1 tsp salt
Bumbu kuah ayam:
5 shallots
5 cloves garlic
4 red lomboks
4 cm lengkuas/laos/galangal
1 serai/sereh/lemongrass
2 salam leaves
100 ml coconut milk
2 tsp palm sugar
1/2 tsp kunyit
500 gr chicken fillet
1 tsp salt
3 tbsp oil

For the sauce, pound or grind the shallots, garlic and lomboks into a paste. Heat the oil in a pan and fry the bumbu together with the serai, salam and kunyit for 5 minutes. Then add the salt and coconut milk and bring to the boil. Then add the meat and cook until done. Remove the meat from the pan and then pull it apart and set aside.
Cut the cabbage, snake beans, potato, tempe, tofu and cucumber into cubes. Heat some oil in a pan and fry the tempe and tofu until golden brown and set aside. Heat the water with the salt in a pan and blanch the cabbage, snake beans, bean sprouts, cucumber and tomatoes briefly. Remove from the pan and let it drain. Cut the tomatoes into cubes.
Heat the bumbu pecel in a pan together with the water and stir until the bumbu is dissolved.
Mix the vegetables with the tofu, tempe, egg and peanut sauce. Spoon the chicken with sauce on top together with the complementary and serve.
