Sambal Goreng Hati Peuteuy
fried stewed liver


Bahan-bahan:
ingredients:
500 gr liver
15 petai/peteh beans
400 ml thick coconut milk (kental, from 1 coconut)
600 ml thin coconut milk (encer, from 1/2 coconut)
4 cm lengkuas/laos/galangal
2 salam leaves
2 tbsp palm sugar
1 tsp salt
5 tbsp oil

Haluskan:
bumbu:
3 shallots
5 cloves garlic
10 red lomboks
1/2 nutmeg
1 tsp pepper
5 kemiri nuts, roasted

Cara membuat:
preparation:
Steam the liver for 20 minutes and then cut it into cubes. Pound or grind the ingredients for the bumbu into a paste. Halve the petai beans.
Heat the oil in a pan and fry the bumbu together with the lengkuas and the salam for 5 minutes. Then add the thin coconut milk together with the salt, the palm sugar and the liver and cook while stirring until the spices are absorbed.
Then add the thick coconut milk and the petai beans and cook while stirring until the sauce has thickened. Serve.
