Asam Padeh
poached fish in spicy light sour sauce
Bahan-bahan;
ingredients:
1000 gr red snapper
8 shallots
4 cloves garlic
1 lemongrass, crushed
7 belimbing wulu (sour starfruit)
150 ml water
3 asem kandis
1 kunyit leave (curcuma/turmeric)
salt to taste
Haluskan:
bumbu:
6 large red chilies
6 cm ginger
4 cm kunyit (turmeric/curcuma)
4 cm laos (galangal)
Cara membuat:
preperation/method:
Cut the fish in chuncks, the garlic and the shallots into thin slices and halve the belimbing. Pound or grind the ingredients for the bumbu into a paste.
Mix all ingredients except the fish in a wok and boil it for 3 minutes. Add the fish and let it simmer slowly for 25 minutes. Then serve.
