Bebotok Ikan
fishballs in sauce
Bahan-bahan:
ingredients:
500 gr cod
1/2 tsp pepper
1 red lombok (large chili)
5 shallots
salt to taste
3 cloves garlic
1 tsp ketumbar (coriander)
1/2 tsp jinten (cumin)
1 sprig flat leaves celery
banana leave
wooden sticks
Bahan-bahan saus:
ingredients sauce:
6 shallots
1 jeurut purut / kaffir lime leaf
2 cloves garlic
1 salam leaf
200 ml fishstock
2 cm laos (galangal), crushed
5 tbsp santen alsi (thick coconut milk)
Cara membuat:
preperation/method:
Chop the celery and the fish fine. Pound or grind the remainig ingredients fine and mix it with the fish and the celery. Form small balls of the mixture and wrap these in bananaleaves and close it with the sticks. Steam the balls for 10 minutes.
Cara membuat saus:
Cut the shallots and the garlic fine. Heat in a wok the oil and fry the shallots, the garlic, the laos, the jurut purut and the salam for 3 minutes. Add the stock and let it simmer for 3 minutes. Then add the santen and let it simmer 1 minute more.
Remove the bananaleaves from the balls en pour the sauce on top and serve.
