Ikan Kembung Asam Pedas
stewed mackerel in a spicy sour sauce
Bahan-bahan:
ingredients:
5 mackerel
1 lime, juice
3 red lomboks
1 kunyit leaf
3 jeruk purut leaves
2 salam leaf
1 serai/sereh/lemon grass
4 asam kandis
1 tsp salt
1 tsp palm sugar
700ml water
Haluskan:
bumbu:
9 shallots
4 cloves of garlic
1 tomato
2 cm kunyit, toasted
2 cm jahe
2 cm lengkuas/laos
3 kemiri nuts
Cara membuat:

Clean the fish. Rub the fish with the lime juice and salt and let it rest for at least 15 minutes, then rinse. Chop the lomboks fine. Pound or grind the ingredients for the bumbu into a paste.
Heat in a pan the water together with the bumbu, the lomboks, the jeruk purut, the salam, the serai and the kunyit leaf and bring it to the boil while stirring. Then add the fish and cook, covered on low heat, for 15 minutes until the fish is done.
Then add the asam kandis and stir until the sauce thickens. Then add the palm sugar and cook until done. Serve.
