Ikan Kembung Pesmol
fried mackerel in a spicy sauce
Bahan-bahan:
ingredients:
500 g ikan kembung/mackerel
1 tsp salt
1 lime
10 red rawits
1 tomato
2 spring onions
1 serai/sereh/lemongrass
2 salam leaves
2 jeruk purut leaves
2 cm lengkuas/laos/galangal
1/2 tsp salt
1/2 tsp palm sugar
1/2 tsp pepper
200 ml of water
oil
Haluskan:
bumbu:
6 shallots
4 cloves of garlic
2 red lomboks
3 kemiri nuts
Cara membuat:
preparation:
Clean the mackerel and rub it with the lime juice and salt and let it sit for 15 minutes. Cut the tomato and spring onion into pieces. Pound or grind the ingredients for the bumbu into a paste.
Heat the oil in a pan and fry the fish until golden brown and done and set aside. Heat 3 tbsp oil in a pan and fry the bumbu together with the salam, galangal/laos and jeruk purut for 5 minutes. Then add the water and bring to the boil. Then add the rawits, pepper, palm sugar and salt and mix well.
Then add the mackerel, tomatoes and spring onion and mix well and cook until done and until the sauce thickens. Serve.
