Cobek Gurami
roasted spicy fish
Bahan-bahan:
ingredients:
750 gr ikan gurami, otherwise trout
1 tbsp lime juice
1 tsp salt
Bumbu:
5 shallots
5 cloves of garlic
3 kemiri nuts
4 red lomboks
2 green lomboks
5 red rawits
4 cm kencur
2 cm jahe
2 serai/sereh/lemon grass
8 jeruk purut leaves
1 tsp terasi/trasi
1 tsp salt
2 tbsp asam water
1 tsp palm sugar
300 ml coconut milk (from 1/2 coconut)

Rub the fish with the salt and lime juice and let it rest for 15 minutes.
Roast the shallots, garlic, kemiri, lomboks and rawits until soft. Then pound or grind it with the kencur and jahe into a coarse paste.
Heat the coconut milk in a pan together with the ingredients for the bumbu and bring to the boil while stirring. Rub the fish with the sauce and roast it over a charcoal fire until half cooked.
Turn the fish over and rub it again with the sauce and then roast it until done. Drizzle the remaining sauce over the fish and serve.
