Cobek Ikan Mas
fried fish with sambal
Bahan-bahan:
ingredients:
500 g ikan mas/carp
1 tbsp lime juice
1 tsp salt
3 sprigs of kemangi
oil
Bahan sambal:
ingredients sambal:
3 shallots
6 red rawits
4 red cabai keriting (curly cayenne pepper)
3 cm kencur
2 tsp palm sugar
1/2 tsp salt
1/2 tsp terasi/trasi bakar
1 jeruk limau/calamansi, juice otherwise lime
Cara membuat:

Clean the fish and rub it with the salt and lime juice and let it sit for 15 minutes. Heat the oil in a pan and fry the fish until brown and done and set aside.
For the sambal, first roast the shallots, rawits and keriting. Then pound or grind the ingredients for the sambal into a paste and mix in the lime juice. Place the sambal on the fish and press it down. Sprinkle the kemangi over it and serve.
