chicken with pork in a peanut sauce

Ingredients:
750 gr chicken thighs
500 gr pork
125 g ham
1 tsp salt
1 tsp pepper
water

Ingredients sauce:
100 gr basmati rice
5 tbsp oil/lard
1 tsp annatto seed
2 cloves of garlic
2 onions
2 tbsp pork fat
150 gr peanut butter

Preparation:
Cut the meat and ham into cubes. Finely chop the garlic and onions. Cut the pork fat into cubes.
Place the meat and ham in a pan with the salt and pepper and add water until the meat is just covered. Then bring to the boil and continue cooking over low heat until the meat is tender. Remove the meat from the pan and strain the stock.
Roast the rice over low heat until it turns golden brown and then pound or grind it into a powder. Heat in a pan the lard and add the annatto seed and fry it covered for 1 minute. Scoop the seed from the pan and remove it.
Then add the garlic, onions and pork fat and fry until golden brown. Mix the rice flour with some stock into a smooth sauce and add it together with the peanut butter and mix well and bring to the boil. Then add the meat and ham and cook until done. Add some extra broth if needed. serve.
