Pare Teri Jengki
stewed sopropo with anchovies
Bahan-bahan:
ingredients:
2 sopropo/bitter melon
1 tsp salt
1 salam leaf
1 cm lengkuas/laos/galangal
50 gr teri jengki / dried anchovies, soaked
1/2 tsp salt
1/2 tsp palm sugar
250ml water
2 tbsp oil
Haluskan:
bumbu:
4 shallots
3 cloves of garlic
2 red lomboks
Cara membuat:
preparation:
Cut the sopropo in half, remove the seeds and then cut into thin slices. Sprinkle the salt over it and knead it until it has softened. Then rinse it off. Cut the ingredients for the bumbu into thin slices.
Heat the oil in a pan and fry the bumbu together with the salam and the galangal for 4 minutes. Then add the sopropo, the anchovies, the salt and the palm sugar and mix well. Cook while stirring until it has softened.
Then add the water and cook until done. Serve.
