Zha Jiang Mian - 炸酱面
pork with noodles
Ingredients:
200 g pork
1 tsp Shaoxing rice wine
2 cm jahe/ginger
2 spring onions
1 star anise
4 tbsp dry yellow soybean paste (黄豆酱)
1 tbsp sweet bean sauce / hoisin sauce
300 ml of water
2 tbsp oil
4 portions of noodles
ingredients vegetable:
150 grams of bean sprouts
150 g edame beans
1 cucumber
6 radishes
water
Preparation:
Finely chop the spring onion and chop the jahe. Cut the meat into cubes. Cut the radishes into thin slices and the cucumber juliene.
Dissolve the bean paste and beanhoisin sauce in the water. Heat the oil in a pan and fry the star anise, the jahe and the green part of the spring onion for 1 minute. Then add the meat and rice wine and fry until the meat has changed color.
Then add the dissolved bean sauce and bring to the boil. Then simmer over low heat for 20 minutes until the sauce has thickened. Then mix in the white part of the spring onion.
Heat water in a pan and blanch the bean sprouts and edame and drain. Cook the noodles until done. Spoon some noodles into a bowl with the vegetables and meat and serve.
