Chongqing Chicken
very spicy fried chicken

600g chicken breast (0r 1 chicken cut into 20 pieces)
2 tbsp Sichuan peppercorns
5 cm jahe / ginger
6 cloves garlic
1 tsp Shaoxing wine
1/2 tsp sugar
7-9 dried chillies
2 tbsp oil
1 tsp oil
1 tsp kecap
2 tsp Shaoxing wine
1 tsp salt
1 tsp cornflour
2 spring onions 
Mix the ingredients for the marinade. Cut the chicken into small pieces and mix it with the marinade and let it stand for at least 1 hour. Grate the jahe and chop the garlic finely. Cut the spring onions into strips and break the dried peppers into pieces.
Heat oil in a pan and fry the meat golden brown and remove from the pan. Add the peppercorns to the pan and cook for 2 minutes. Add the jahe and the garlic and cook for 1 minute. Add the dried peppers and cook 1 minute more.
Add the chicken, the wine and sugar and fry until the liquid has evaporated. Sprinkle the spring onions on top and serve.
